Blueberry Oatmeal Multigrain Pancakes



Hi everyone!


     I have been relaxing at the river all weekend ... thus not eating so healthy or sticking to a workout plan.  It would be nice to start my week and the bodyrock.tv May 30 Day Challenge with some healthy breakfast choices.  I just finished making some blueberry oatmeal multigrain pancakes and I am excited to share them with you.  It is a perfect way to freeze portion sizes for later.  They turn out delicious after reheating them in the toaster.

Let's get started!!



.:: INGREDIENTS ::.

1 packet Trader Joe's instant oatmeal {any kind}
1 cup Trader Joe's multigrain pancake mix
1/2 cup almond milk
1 large egg
1 tablespoon canola oil
1/4 cup blueberries {I used freeze dried blueberries}
{OPTIONAL: I added 8 tablespoons of flaxseeds.  I guess-timated the portion per pancake based on what the portion size was per my bag of flax}



Prepare the oatmeal according to the package directions and allow it to cool to room temperature.  Set this aside.

I put the flax in a coffee grinder ... Set this aside.

Mix the egg and milk together. Set this aside.



Using a wooden spoon and a large mixing bowl combine the pancake mix with the egg/milk mixture, oil, flax, and the prepared oatmeal. 

{Stir no more than about 20 times to prevent flat pancakes.  This is also why we pre-mixed the egg and milk}.  




Now fold in the blueberries.



Oil a griddle.




Take a paper towel and spread your oil around.  You will know when the griddle is hot enough buy sprinkling a little water on the pan, if there is a sizzle it is time to cook our pancakes!!




Use a 1/4 measuring cup to drop the batter onto the hot griddle.  The pancakes will be thick and will not run. 




In about 2 minutes you will see bubbles form on the top of the cooking pancakes.  It is now time to flip the pancakes and cook for an additional 2-3 minutes.




I was able to yield 12.










When the pancakes are cooled place them in plastic ziplock baggies and freeze for later. Toast them when you are ready to eat them.
