Coconut Fried Cinnamon Bananas with Steel Cut Oats


Hi everyone!


     When I went to Costa Rica fried plantains were all over the place.  I have missed them a lot!!  Nutty4nutrition posted a version of fried banana on instagram {ig} and I decided to make my own version. 

     An ig friend wanted me to post this on my blog so I hope you enjoy this as much as I did!

Let's get started!!

.:: INGREDIENTS ::.

steel cut oats
1 or 2 bananas
1 to 2 tbl coconut oil
cinnamon to taste
nutmeg to taste
1 serving raw walnuts
raw honey to taste {I used orange blossom honey}


Prepare a serving of steel cut oats based on the back of the package, set aside.


 Coat a non-stick pan with coconut oil, heat to medium. 
 {use just enough to coat the pan and have a “little extra” left on the bottom … depending on the pan size, this will be about 1-2 tablespoons of coconut oil}

Chop your banana to a desired thickness and place the banana on the pan.


 Sprinkle with cinnamon and nutmeg.
{nutmeg does not smell good when cooking, yuck}

Fry each side in the coconut oil for a couple minutes.

Combine the steel cut oats, walnuts and fried banana in a bowl, drizzle honey on top.
{sub a fruit for the nut to change it up next time}
